Peanut Butter Fudge Power Bars



Have a sweet tooth and dying for something sweet ... Try these.

Ingredients:
1 16 oz Jar Natural Creamy Peanut Butter
1 1/4 Cup Natural Honey
2 scoops 100% Natural Whey Protein Powder
3 Cups Rolled Oats


Directions:
1. Heat peanut butter in the microwave for 90 seconds.

2. Add in honey, stir.
3. Mix in protein powder.
4. Combine oats with peanut butter mixture.
5. Spread evenly in 9×13″ pan, and refrigerate for at least an hour.
6. Cut into 1 1/2″ squares, and enjoy!


Each 1 1/2″ fudge square has: 110 calories, 5 grams of fat, 12.5 grams of carbs, and 5.5 grams of protein

Cookie Dough Greek Yogurt



Anything with yogurt, peanut butter and chocolate I am game! It is called clean eating cookie dough yogurt!!!  AMAZING!!! Now I would't put this on the menu for every night as a snack but this is a perfect treat to replace your bowl of ice cream or the blizzard.  Let me know when you try it and what you think!!

Ingredients

3/4 cup plain Greek yogurt
1 tbsp nut butter (I use natural peanut butter)
1 tbsp honey
1/4 tsp vanilla
 pinch of Himalayan salt
1 tbsp dark  mini chocolate chips.

Directions:

➡Combine Greek yogurt with the nut butter, honey, vanilla and sea salt. Mix until smooth. Top with mini choc chips and enjoy!!!

Moist Peanut Butter Banana Muffins

Moist Peanut Butter Banana Muffins

Yields: 8 Muffins
Moist Peanut Butter Banana Muffins



Notes: these are oil-free muffins (except for oil used for muffin tins) Yields 8 muffins
  • extra virgin coconut oil , for spreading on muffin tins
  • 1 cup raw cauliflower florets
  • 1 cup white whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • ½ cup firmly packed dark brown sugar (or date sugar)
  • ½ cup organic crunchy peanut butter
  • 1 whole very ripe banana, mashed
  • 1  egg, lightly beaten
  1. Preheat oven to 350 degrees. Grease the bottom and sides of 8 muffin tins with coconut oil.
  2. Put about 1 inch of water in the bottom of a large pot. Add a steamer basket (without the cauliflower), cover and bring the water to a boil. Place the cauliflower in the steamer and steam for 8 to 10 minutes, or until very fork-tender. Set cauliflower aside to cool. When cool enough to handle, transfer cauliflower to a food processor or high speed blender and process until smooth and creamy. Note: you may need to add a tablespoon or two of water to the cauliflower puree.
  3. In a medium-sized bowl, mix together the flour, baking soda, baking powder and salt.
  4. In a separate bowl, mix together the brown sugar, peanut butter, cauliflower puree, banana puree and eggs.
  5. Add the wet ingredients in with the dry and stir to combine (the mixture should be a bit lumpy.) Divide the batter among the 8 muffin tins. Bake for about 15 to 20 minutes, or until a toothpick inserted in the middle comes out clean. Transfer muffins to a wire rack to cool.

Note: Muffins will keep in the fridge for up to 2 days if stored in an airtight container or they can be individually wrapped and frozen for up to 2 weeks.

Clean Eating Snacks


I am always looking for new easy snack ideas. Something that is easy to prepare, easy to pack and taste GREAT. 


  • 1/2 cup cottage cheese w/ 1/2 cup blueberries
  • 1/2 cup greek yogurt w/ 1/2 cup blueberries or other berries
  • 1 apple and 10 raw unsalted almonds
  • 2 cups of celery and 1-2 tbsp all natural peanut butter (the only ingredient should be peanuts)
  • 2 plain unsalted brown rice cakes with 1-2 tbsp all natural peanut butter.
  • 1 cup of carrots and cucumbers and 1-2 tbsp hummus
  • Protein Shake- 1 scoop vanilla protein powder, 12-14 oz water, frozen fruit.
  • 5 egg whites with salsa and a sprinkle of feta cheese.
  • 1 whole grain tortilla with 1 tbsp all natural peanut butter and 1 banana sliced, create a roll up.
  • 1 cup of edamame
  • 2 cups sugar snap peas and 1-2 tbsp hummus
  • 1 cup strawberries and a handful of raw unsalted cashews
  • 20 grapes and 1 low fat cheese stick
  • Apple alone or with 1-2 tbs all natural peanut butter
  • Banana alone or with 1-2 tbs all natural peanut butter
  • 1 Grapefruit
  • 1 oz Dark Chocolate 85% or higher
