Ingredients
- 1½ cups uncooked quinoa, rinsed
- 2¼ cups vegetable or chicken broth, or water
- 2 cups chopped broccoli florets
- 1½ cups shredded cheddar cheese
- ¼ tsp. pepper
- ½ tsp salt (may reduce or omit salt if using broth)
Instructions
- In a medium sauce pan over medium heat, bring the quinoa, broth or water, and broccoli to a boil. Stir gently, reduce heat to medium-low and cover.
- Let simmer, covered, for about 20 minutes, or until the quinoa has absorbed all of the liquid.
- Fluff quinoa gently with a fork and mix in the shredded cheese, salt, and pepper.
